1 cup Pumpkin puree
1 cup Unsweetened Almond Milk (I use Almond Breeze)
1/2 cup Egg Whites
2 whole eggs
1 1/3 cups Quaker large flake oats (not quick oats)
8 tsp (4 packets) Vanilla Stevia (or your fav no calorie sweetner) depending on how sweet you like it, if you have a sweet tooth add more
2 scoops vanilla protein powder
1 tsp Cinnamon
1 tsp nutmeg
1 tsp baking powder
1 tsp vanilla
Preheat oven to 375. Grease muffin tin well or use muffin cups. Pour about 1/4 cup of batter into each cup. Makes 12 muffins. Bake for 30 mins. Drizzle with Sugar free caramel Torani syrup to add extra sweetness.
If you don’t like protein powder you can leave it out and the protein goes down by 12 grams per serving.
